Poffertjes (Dutch Mini Pancakes)

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter, plus extra for cooking
  • Powdered sugar, for serving

Instructions

  1. Prepare the Batter

    In a large bowl, whisk together the flour, baking powder, salt, and sugar. In a separate bowl, combine the milk, egg, and melted butter. Gradually add the wet ingredients to the dry ingredients, stirring until smooth. Let the batter rest for about 15 minutes.

  2. Heat the Poffertjes Pan

    Heat a poffertjes pan or a non-stick skillet over medium heat and lightly grease each cavity with butter.

  3. Cook the Poffertjes

    Spoon small amounts of batter into each cavity of the pan, filling about 3/4 full. Cook for 1–2 minutes, until bubbles form on the surface and the edges start to set. Use a skewer or fork to flip each poffertje and cook for another 1–2 minutes until golden and puffed.

  4. Serve

    Transfer the poffertjes to a plate and generously dust with powdered sugar. Add a small pat of butter on top while they are warm.
