Ghiveci (Romanian Vegetable Stew)

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 eggplant, chopped
  • 2 tomatoes, peeled and diced (or 1 cup canned diced tomatoes)
  • 1 cup green beans, trimmed and cut into pieces
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup water or vegetable broth

Instructions

  1. Prepare the Vegetables

    Wash and chop all vegetables into bite-sized pieces.

  2. Sauté Aromatics

    In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened and fragrant.

  3. Cook the Vegetables

    Add carrots, bell pepper, zucchini, and eggplant to the pot. Stir well and cook for 5–7 minutes until slightly softened.

  4. Add Tomatoes and Seasoning

    Add diced tomatoes, green beans, paprika, thyme, salt, and pepper. Stir to combine. Pour in water or vegetable broth to help the vegetables cook evenly.

  5. Simmer

    Reduce heat to low, cover, and simmer for 30–40 minutes, stirring occasionally, until all vegetables are tender and the flavors meld together.

  6. Finish

    Stir in chopped fresh parsley just before serving. Adjust seasoning to taste.
