Ghiveci (Romanian Vegetable Stew)

- 1 cup green beans, trimmed and cut into pieces
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup water or vegetable broth

Prepare the Vegetables
Wash and chop all vegetables into bite-sized pieces.

In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened and fragrant.
