Tô Zaafi

Ingredients
For the Tô
- 2 lb (1 kg) millet flour or maize flour
- 6 cups (1.5 liters) water
- A pinch of salt (optional)
For the Zaafi Sauce
- 1 lb (500 g) goat meat or beef, cut into bite-sized pieces
- 2 medium tomatoes, diced
- 1 medium onion, chopped
- 2 tablespoons (30 ml) vegetable oil
- 2 cups (500 ml) leafy greens (e.g., spinach or kale)
- 2 teaspoons (10 g) ground hot pepper
- 1 teaspoon (5 g) ground ginger
- 1 teaspoon (5 g) salt

Prepare the Tô
Bring 4 cups (1 liter) of water to a boil in a large pot. Gradually whisk in the millet or maize flour to prevent lumps. Lower the heat and stir continuously for about 10–15 minutes until the mixture thickens into a smooth, dough-like consistency. Add the remaining 2 cups (500 ml) of water if needed for your desired texture. Set aside.

Cook the Sauce
Heat vegetable oil in a pan over medium heat. Add the chopped onion and sauté until golden. Add the diced tomatoes and cook for 5 minutes until softened. Stir in the goat meat, ground pepper, ginger, and salt. Cook for 10 minutes, stirring occasionally. Add the leafy greens and 1 cup (250 ml) of water. Simmer for another 10 minutes until the meat is tender and the flavors meld.

Combine and Serve
Serve the Tô as a mound on a plate. Ladle the Zaafi sauce generously over the top or alongside.
