Tuwo Shinkafa (Nigerian Rice Fufu)

Ingredients

  • 2 cups short-grain rice
  • 4 cups water
  • 1/2 teaspoon salt (optional)

Instructions

  1. Rinse and Cook the Rice

    Rinse the rice under cold water until the water runs clear. In a large pot, combine the rice and water. Bring to a boil over medium-high heat, then reduce the heat to low and cover. Cook until the rice is very soft and tender, about 20–25 minutes.

  2. Mash the Rice

    Once the rice is cooked, drain any excess water. Using a wooden spoon or mortar and pestle, pound or mash the rice until it becomes smooth and sticky.

  3. Form the Tuwo

    Wet your hands with water to prevent sticking. Shape the mashed rice into balls or oval mounds, pressing firmly to ensure they hold together.

  4. Serve

    Serve Tuwo Shinkafa warm alongside your favorite Nigerian soups or stews, such as Miyan Kuka, Miyan Taushe, or Egusi Soup.
