Kutia (Traditional Ukrainian Christmas Wheat Porridge)

Kutia is a traditional Ukrainian dish served during Christmas celebrations, symbolizing prosperity, health, and remembrance of ancestors. This sweet, nutty, and slightly textured porridge combines wheat berries with poppy seeds, honey, and dried fruits, creating a festive treat that brings warmth and tradition to the holiday table.

Ingredients

  • 1 cup wheat berries (or whole wheat)
  • 1/2 cup poppy seeds
  • 1/2 cup honey (adjust to taste)
  • 1/2 cup walnuts, chopped
  • 1/4 cup almonds, chopped
  • 1/4 cup raisins
  • 1/4 cup dried cranberries or cherries
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt
  • Water, for cooking

Instructions

  1. Prepare the Wheat

    Rinse the wheat berries thoroughly. Place them in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1–1.5 hours, or until the wheat is soft but still slightly chewy. Drain any excess water and let the wheat cool.

  2. Prepare the Poppy Seeds

    While the wheat is cooking, grind the poppy seeds using a mortar and pestle or food processor. Place the ground poppy seeds in a small saucepan, cover with a few tablespoons of water, and simmer gently for 5–10 minutes until fragrant. Allow to cool slightly.

  3. Mix the Kutia

    In a large bowl, combine the cooked wheat, poppy seeds, chopped nuts, raisins, dried cranberries, and honey. Add vanilla extract and a pinch of salt, then mix well until all ingredients are evenly incorporated.

  4. Serve

    Traditionally, Kutia is served cold or at room temperature in small portions as part of the Christmas Eve meal. Optionally, garnish with additional nuts or drizzle with extra honey.
