Ingredients

For the Conch:
  • 1 lb (0.45 kg) fresh conch, cleaned and pounded
  • 1 cup (0.12 kg) all-purpose flour
  • 1 cup (0.12 kg) cornmeal
  • 2 eggs, beaten
  • ½ cup (0.12 liters) milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional, for heat)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups (0.47 liters) vegetable oil (for frying)
For Serving:
  • Lemon wedges
  • Tartar sauce or spicy mayo

Instructions

  1. Prepare the Conch

    Clean the conch thoroughly and remove any tough parts. Place the conch between plastic wrap and pound it with a meat mallet until thin and tender.

  2. Season and Coat

    In one bowl, mix the flour, cornmeal, salt, black pepper, cayenne, garlic powder, and onion powder. In a separate bowl, whisk the eggs with milk. Dip each piece of conch into the egg mixture, then coat it evenly with the flour mixture.

  3. Fry to Perfection

    Heat the vegetable oil in a deep pan to 350°F (175°C). Fry each conch piece for 3–4 minutes per side or until golden brown and crispy. Remove and place on a paper towel to drain excess oil.
