Ingredients

For the Pastry:

  • ½ teaspoon salt

  • ¼ cup cold shortening, cubed
  • ⅓ cup ice water
  • ½ teaspoon turmeric (for color)
For the Filling:
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef (or chicken/vegetables for variation)
  • 1 Scotch bonnet pepper, seeded and finely chopped (optional, for heat)
  • 1 teaspoon dried thyme
  • 1 teaspoon allspice
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ cup breadcrumbs
  • ¼ cup beef or vegetable broth
  • 1 green onion, chopped

Instructions

  1. Make the Pastry

    In a large bowl, combine flour, salt, and turmeric. Cut in the butter and shortening until the mixture resembles coarse crumbs. Gradually add ice water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

  2. Prepare the Filling

    Heat oil in a skillet over medium heat. Sauté onion and garlic until translucent. Add ground meat, breaking it apart as it cooks. Stir in Scotch bonnet pepper, thyme, allspice, paprika, salt, and black pepper. Add breadcrumbs and broth, cooking until the mixture is thick and well combined. Stir in green onion, then remove from heat and let cool.

  3. Assemble the Patties

    Preheat oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into circles or rectangles. Place a spoonful of filling onto one side of each pastry piece, fold over, and press edges with a fork to seal. Optional: Brush patties with a little beaten egg for a golden finish.

  4. Bake

    Arrange patties on a baking sheet lined with parchment paper. Bake for 25–30 minutes or until golden and flaky.
