- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and sliced thin
- 6 cups chicken or vegetable broth

- 1/2 pound chorizo sausage, sliced thin
- 4 cups kale or collard greens, thinly sliced
