- 1 pound (450 g) salted cod, soaked overnight and shredded
- 3 tablespoons olive oil
- 1 large onion, finely sliced
- 2 garlic cloves, minced
- 4 medium potatoes, peeled and cut into thin matchsticks
- 6 large eggs
- Salt and freshly ground black pepper, to taste
- 1/4 cup fresh parsley, chopped
- Black olives, for garnish

Rinse the soaked cod thoroughly and remove any skin or bones. Shred the cod into small pieces using your hands or a fork.

Cook the Potatoes
Heat olive oil in a large skillet over medium heat. Fry the potato matchsticks until golden and crispy. Remove and drain on paper towels.
