Ingredients

  • 1 pound (450 g) salted cod, soaked overnight and shredded
  • 3 tablespoons olive oil
  • 1 large onion, finely sliced
  • 2 garlic cloves, minced
  • 4 medium potatoes, peeled and cut into thin matchsticks
  • 6 large eggs
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Black olives, for garnish

Instructions

  1. Prepare the Cod

    Rinse the soaked cod thoroughly and remove any skin or bones. Shred the cod into small pieces using your hands or a fork.

  2. Cook the Potatoes

    Heat olive oil in a large skillet over medium heat. Fry the potato matchsticks until golden and crispy. Remove and drain on paper towels.

  3. Sauté the Aromatics

    In the same skillet, add the onion and garlic. Sauté until soft and fragrant, about 5–7 minutes.

  4. Combine Cod and Potatoes

    Add the shredded cod to the skillet and cook for 5 minutes, stirring occasionally. Return the fried potatoes and mix gently to combine.

    Beat the eggs in a bowl and pour over the cod and potato mixture. Cook over low heat, stirring constantly, until the eggs are just set but still creamy. Season with salt and pepper to taste.
