Ingredients
- 1 lb chicken, cut into pieces
- 1 lb pork or beef, cut into pieces
- 1 lb fish fillets (optional)
- 2 cups taro root, peeled and chopped
- 2 cups sweet potatoes, peeled and chopped
- 2 cups yam or cassava, peeled and chopped
- 2 cups pumpkin or squash, peeled and chopped
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 bunch fresh thyme
- 2 cups coconut milk
- Salt and pepper to taste
- Banana leaves for wrapping (or aluminum foil if unavailable)

Prepare the Ingredients
Peel and chop all root vegetables into even pieces. Cut meat and fish into serving-sized portions. Slice the onion and mince the garlic.

Layer the Bougna
Lay out a large banana leaf and place a portion of root vegetables in the center. Add pieces of meat and fish on top. Sprinkle with sliced onion, minced garlic, and fresh thyme. Pour a little coconut milk over the layers and season with salt and pepper.

Fold the banana leaf tightly around the ingredients to form a secure package. Use kitchen twine or strips of banana leaf to tie the bundle, ensuring it is well-sealed.

Cook the Bougna
Traditionally, Bougna is buried in a pit with hot stones and covered with earth to steam for several hours. For a modern method, steam or bake the wrapped Bougna in a large pot or oven at 350°F (175°C) for about 2–3 hours, or until the meat and vegetables are tender and infused with aromatic flavors.
