Plov (Uzbek Rice Pilaf)

Experience the warmth and aroma of Central Asian cuisine with Plov, a traditional Uzbek rice pilaf that brings together tender meat, fragrant rice, and rich spices. This hearty dish is beloved for its deep, savory flavor and is often prepared for family gatherings, holidays, and celebrations.

Ingredients

  • 2 cups long-grain rice (preferably basmati)
  • 1 lb (450 g) lamb or beef, cut into bite-sized pieces
  • 2 large carrots, cut into thin matchsticks
  • 1 large onion, finely sliced
  • 1/2 cup vegetable oil
  • 4 cups water
  • 1 head garlic, unpeeled
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds (optional)
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Prepare the Ingredients

    Rinse the rice several times in cold water until the water runs clear, then soak it for 20–30 minutes. Peel and slice the onions and carrots, and cut the meat into cubes.

  2. Brown the Meat

    Heat vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the meat and cook until browned on all sides. Remove excess fat if needed.

  3. Add Vegetables

    Add the sliced onions and cook until golden brown. Then add the carrots and sauté for 5–7 minutes until they begin to soften.

  4. Season and Simmer

    Add cumin seeds, coriander, paprika, salt, and pepper. Stir well to coat the ingredients in spices. Pour in 4 cups of water, bring to a boil, then reduce heat and simmer for 30 minutes.

  5. Add Rice

    Carefully layer the soaked rice on top of the meat and vegetables without stirring. Gently smooth the rice with a spoon. Nestle the unpeeled head of garlic into the center. Add enough water to cover the rice by about 1 inch.

  6. Cook the Plov

    Bring to a gentle boil, then reduce the heat to low. Cover and cook for about 20–25 minutes, until the rice has absorbed all the liquid and is tender. Avoid stirring during cooking.

  7. Serve

    Once the rice is done, remove from heat and let the Plov rest for 10 minutes, covered. Gently mix the layers before serving.

Serving

Serve Plov hot, with pieces of tender meat and carrots distributed evenly throughout the rice. It pairs beautifully with a fresh tomato and cucumber salad or plain yogurt.
