Tuluk (Traditional Vanuatu Dish)

Experience the authentic flavors of Vanuatu with Tuluk, a traditional dish that combines grated taro or yam with creamy coconut milk and fresh island greens. Wrapped in banana leaves and cooked slowly in an earth oven, Tuluk offers a unique taste of the islands and highlights the use of local ingredients and traditional cooking techniques.

Ingredients

  • 2 cups grated taro or yam
  • 1 cup coconut milk
  • 2 cups island greens (spinach, fern leaves, or similar)
  • Banana leaves for wrapping
  • Salt to taste

Instructions

  1. Prepare the Filling

    In a large bowl, combine the grated taro or yam with coconut milk. Mix in the chopped island greens and season with salt.

  2. Wrap in Banana Leaves

    Cut banana leaves into large squares. Place a portion of the mixture onto each leaf and fold the edges to create a sealed parcel.

  3. Cook in an Earth Oven

    Traditionally, Tuluk is cooked in a hot earth oven. Alternatively, you can steam or bake the parcels at 350°F (175°C) for 45–60 minutes, until the taro or yam is tender and fully cooked.

  4. Serve

    Carefully unwrap the banana leaves and serve Tuluk warm. The dish can be enjoyed on its own or as a side to other traditional island foods.
