Bolo de Caco (Madeiran Flatbread)

Experience the unique taste of Madeira with Bolo de Caco, a traditional flatbread known for its soft, slightly sweet interior and crisp exterior. Perfect as a side for grilled meats, seafood, or simply enjoyed with garlic butter, this bread brings a taste of Portuguese island cuisine to your table.

Ingredients

  • 500 g (4 cups) all-purpose flour
  • 200 ml (about 3/4 cup plus 2 tbsp) warm water
  • 10 g (2 tsp) salt
  • 15 g (1 tbsp) sugar
  • 25 g (2 tbsp) fresh yeast or 7 g (2 tsp) dry yeast
  • 50 g (3 1/2 tbsp) sweet potato, boiled and mashed
  • 30 ml (2 tbsp) olive oil
  • Optional: garlic butter for serving

Instructions

  1. Prepare the Dough

    In a small bowl, dissolve the yeast and sugar in warm water and let it sit for 5–10 minutes until frothy. In a large mixing bowl, combine the flour and salt. Add the mashed sweet potato and yeast mixture. Mix until a soft dough forms. Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise for 1–2 hours, or until it doubles in size.

  2. Shape the Breads

    Punch down the dough and divide it into 6–8 equal portions. Shape each portion into a round, flat disc about 1 cm thick. Let the discs rest for 15–20 minutes while you heat the cooking surface.

  3. Cook the Breads

    Heat a heavy skillet or griddle over medium heat. Brush lightly with olive oil. Cook each flatbread for 4–5 minutes on each side, or until golden brown and slightly puffed.

  4. Serve

    Serve warm with garlic butter, or use as a base for sandwiches.
