Ingredients
- 500 g (4 cups) all-purpose flour
- 200 ml (about 3/4 cup plus 2 tbsp) warm water
- 10 g (2 tsp) salt
- 15 g (1 tbsp) sugar
- 25 g (2 tbsp) fresh yeast or 7 g (2 tsp) dry yeast
- 50 g (3 1/2 tbsp) sweet potato, boiled and mashed
- 30 ml (2 tbsp) olive oil
- Optional: garlic butter for serving
Instructions
-
Prepare the Dough
In a small bowl, dissolve the yeast and sugar in warm water and let it sit for 5–10 minutes until frothy. In a large mixing bowl, combine the flour and salt. Add the mashed sweet potato and yeast mixture. Mix until a soft dough forms. Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise for 1–2 hours, or until it doubles in size.
-
Shape the Breads
Punch down the dough and divide it into 6–8 equal portions. Shape each portion into a round, flat disc about 1 cm thick. Let the discs rest for 15–20 minutes while you heat the cooking surface.
-
Cook the Breads
Heat a heavy skillet or griddle over medium heat. Brush lightly with olive oil. Cook each flatbread for 4–5 minutes on each side, or until golden brown and slightly puffed.
-
Serve
Serve warm with garlic butter, or use as a base for sandwiches.
Serving
Bolo de Caco pairs beautifully with grilled seafood, chorizo, or fresh salads. Its soft texture and subtle sweetness make it a versatile and memorable addition to any meal.
