Ugali (East African Maize Flour Dish)

  • 2 cups maize (corn) flour
  • 4 cups water

Instructions

  1. Boil the Water

    Pour water into a medium-sized pot and bring it to a boil over medium heat. Add a pinch of salt if desired.

  2. Add the Maize Flour

    Gradually add the maize flour to the boiling water, stirring constantly with a wooden spoon or spatula to prevent lumps from forming.

  3. Cook the Ugali

    Reduce the heat to low and continue stirring. The mixture will thicken and start to pull away from the sides of the pot. Cook for about 5–10 minutes, stirring occasionally, until the Ugali is firm and smooth.

  4. Serve

    Once cooked, remove from heat and shape into a round mound using the spoon or by hand. Serve hot alongside vegetables, meats, or sauces.
