- 2 cups whole milk
- 1 cup heavy cream

In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil. In a separate bowl, whisk together the egg yolks and sugar until pale and creamy.

Temper the Eggs
Slowly pour a small amount of the hot milk mixture into the egg yolks, whisking constantly to prevent curdling. Gradually add the rest of the milk mixture.

Cook the Custard
Return the mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon, until it thickens enough to coat the back of the spoon. Do not let it boil. Remove from heat and stir in the vanilla extract.

Strain the custard through a fine mesh sieve into a clean bowl to remove any lumps. Cover and refrigerate for at least 4 hours or overnight to chill completely.
