Ingredients

For the Shark:
  • 1 lb shark fillets, cut into portions
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Juice of 1 lime
  • 1 cup all-purpose flour, for dredging
  • Vegetable oil, for frying
For the Bake (Fried Bread):
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3/4 cup water (adjust as needed)
  • Vegetable oil, for frying
Toppings and Condiments:
  • Lettuce, shredded
  • Tomato slices
  • Cucumber slices
  • Tamarind sauce
  • Garlic sauce
  • Hot pepper sauce
  • Ketchup or mustard (optional)

Instructions

  1. Prepare the Shark

    Rinse the shark fillets and pat dry. In a small bowl, mix salt, pepper, paprika, garlic powder, onion powder, and lime juice. Rub this mixture over the shark fillets and let marinate for 15–20 minutes.

    Heat vegetable oil in a frying pan over medium-high heat. Dredge the marinated shark in flour, shaking off excess. Fry the fillets until golden brown and cooked through, about 3–4 minutes per side. Remove and drain on paper towels.

  2. Make the Bake (Fried Bread)

    In a large bowl, combine flour, baking powder, sugar, and salt. Gradually add water and knead to form a soft, smooth dough. Divide the dough into small portions and roll each into a flat circle about 1/2 inch thick.

    Heat oil in a skillet over medium heat. Fry each dough circle until puffed and golden brown, about 2–3 minutes per side. Drain on paper towels.

  3. Assemble the Bake and Shark

    Slice the fried bread horizontally but not completely through. Place a piece of fried shark inside each bake. Add desired toppings: lettuce, tomato, cucumber, and sauces. Customize with tamarind, garlic, hot pepper, or any favorite condiments.
