Callaloo Recipe

Ingredients
- 1 lb callaloo leaves (or spinach as a substitute), washed and chopped
- 1 medium onion, chopped

- 1 scotch bonnet pepper, whole or chopped (optional for heat)
- 1 medium tomato, chopped
- 1/2 cup coconut milk
- 2 tablespoons vegetable oil
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- 1/2 cup chopped bell peppers (optional)
- 1/2 cup diced okra (optional)

Prepare the Vegetables
Heat vegetable oil in a large pot over medium heat. Add chopped onions, garlic, and bell peppers, and sauté until fragrant and softened.

Cook the Callaloo
Add the chopped callaloo leaves to the pot along with the thyme, tomato, and scotch bonnet pepper. Stir well to combine and allow the greens to wilt slightly.

Pour in the coconut milk, reduce the heat to low, and simmer for 10–15 minutes, stirring occasionally, until the callaloo is tender and fully cooked. Season with salt and pepper to taste.

Add diced okra or other vegetables during the last 5 minutes of cooking for extra texture and flavor. Remove the scotch bonnet pepper before serving if you prefer a milder dish.
