Callaloo Recipe

Experience the vibrant flavors of Caribbean cuisine with Callaloo, a beloved dish that blends tender greens with aromatic seasonings, creating a rich and comforting meal. Perfect as a side dish or a main course, Callaloo brings a taste of the islands to your table.

Ingredients

  • 1 lb callaloo leaves (or spinach as a substitute), washed and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, whole or chopped (optional for heat)
  • 1 medium tomato, chopped
  • 1/2 cup coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • 1/2 cup chopped bell peppers (optional)
  • 1/2 cup diced okra (optional)

Instructions

  1. Prepare the Vegetables

Heat vegetable oil in a large pot over medium heat. Add chopped onions, garlic, and bell peppers, and sauté until fragrant and softened.

  2. Cook the Callaloo

Add the chopped callaloo leaves to the pot along with the thyme, tomato, and scotch bonnet pepper. Stir well to combine and allow the greens to wilt slightly.

  3. Add Coconut Milk

Pour in the coconut milk, reduce the heat to low, and simmer for 10–15 minutes, stirring occasionally, until the callaloo is tender and fully cooked. Season with salt and pepper to taste.

  4. Optional Additions

Add diced okra or other vegetables during the last 5 minutes of cooking for extra texture and flavor. Remove the scotch bonnet pepper before serving if you prefer a milder dish.

  5. Serve

Serve the Callaloo hot as a side dish with rice, fish, or meat, or enjoy it as a comforting vegetarian main course.

Serving

Pair Callaloo with fried plantains, dumplings, or bread for a full Caribbean-inspired meal. The creamy coconut milk and aromatic spices make this dish a flavorful celebration of island cuisine.
