Pelau (Caribbean One-Pot Rice and Meat)

- 2 pounds chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 cup pigeon peas (cooked or canned)
- 2 cups long-grain rice
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 sprigs thyme
- 1 teaspoon brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 cups coconut milk
- 2 cups chicken broth
- 2 stalks scallion, chopped
- 1 hot pepper (optional)
- 1 tomato, chopped

Prepare the Chicken
Season the chicken with salt, pepper, and paprika. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Sprinkle in the brown sugar and let it caramelize until it turns a deep amber color. Brown the chicken pieces in the caramel, turning to coat evenly.

Add the onion, garlic, bell pepper, scallion, hot pepper (if using), and tomato to the pot. Sauté for 3–5 minutes until the vegetables are softened and fragrant.
