Arroz de Marisco (Portuguese Seafood Rice)

Ingredients

  • 4 cups seafood stock or fish broth
  • ½ cup white wine
  • 200 g (7 oz) shrimp, peeled and deveined
  • 200 g (7 oz) mussels, cleaned
  • 200 g (7 oz) clams, cleaned
  • 100 g (3.5 oz) crab meat or crab claws
  • 1 teaspoon paprika
  • A pinch of saffron (optional)
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prepare the Base

    Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the garlic and red bell pepper, cooking for another 2 minutes until fragrant.

  2. Build the Flavor

    Add the chopped tomatoes, paprika, and saffron. Cook for 5–7 minutes, allowing the tomatoes to break down and form a rich sauce.

  3. Add the Rice

    Stir in the rice, coating it well with the tomato mixture. Pour in the white wine and cook until mostly absorbed.

  4. Simmer

    Gradually add the seafood stock, one cup at a time, stirring occasionally. Simmer over medium-low heat for about 15 minutes, or until the rice is almost cooked but still slightly firm.

  5. Add the Seafood

    Add the shrimp, mussels, clams, and crab to the pot. Cover and cook for 5–7 minutes, until the seafood is cooked through and the shells have opened. Discard any unopened shells. Season with salt and pepper to taste.

  6. Serve

    Remove from heat and let rest for a few minutes. Sprinkle with fresh cilantro or parsley and serve hot with lemon wedges on the side.
