Calulu (Angolan Fish Stew)

Ingredients
- 2 pounds salted or fresh fish (cod, tilapia, or your choice), cut into chunks
- 2 tablespoons palm oil (or vegetable oil)
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, chopped
- 1 red bell pepper, chopped
- 1 cup pumpkin leaves or spinach, chopped
- 1/2 cup okra, sliced
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon chili powder (optional)
- Salt and pepper to taste
- 2 cups water or fish stock
- 1/2 cup cooked peanuts, chopped (optional)
- 2 tablespoons lemon juice

Prepare the Fish
If using salted fish, soak it in water for a few hours to remove excess salt, then rinse and pat dry. Cut the fish into bite-sized pieces.

Cook the Base
Heat palm oil in a large pot over medium heat. Add chopped onions and garlic, sautéing until fragrant and translucent. Add chopped tomatoes, red bell pepper, tomato paste, paprika, and chili powder. Cook for 5–7 minutes until the vegetables soften and release their juices.

Simmer the Stew
Add water or fish stock to the pot and bring to a gentle boil. Add the fish chunks and simmer over low heat for 15–20 minutes, allowing the flavors to meld.

Stir in pumpkin leaves (or spinach), okra, and chopped peanuts if using. Continue to simmer for another 5–10 minutes, until the greens are tender and the stew thickens slightly.
