Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tomatoes, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon chili powder (optional)
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley or coriander leaves for garnish

Instructions

  1. Prepare the Chicken

    Season the chicken pieces with salt and pepper. Heat the vegetable oil in a large pot over medium-high heat. Brown the chicken pieces on all sides, then remove them from the pot and set aside.

  2. Cook the Aromatics

    In the same pot, add chopped onion, garlic, and ginger. Sauté until fragrant and translucent. Stir in chopped tomatoes, red and green bell peppers, and tomato paste. Cook for 5–7 minutes until the vegetables soften and the mixture thickens slightly.

  3. Add Spices and Simmer

    Sprinkle in paprika, coriander, and chili powder if using. Stir well to combine. Return the chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 30–40 minutes, or until the chicken is fully cooked and tender.

  4. Serve

    Adjust seasoning with salt and pepper. Garnish with fresh parsley or coriander leaves before serving.
