Zereshk Polo (Persian Saffron Rice with Barberries)

Savor the vibrant flavors of Persian cuisine with Zereshk Polo, a fragrant rice dish featuring golden saffron-infused rice topped with tart, jewel-like barberries. Often served alongside succulent chicken, this dish is a celebration of color, aroma, and taste, perfect for special occasions or an elegant family meal.

Ingredients

  • 2 cups basmati rice
  • 1/2 cup dried barberries (zereshk), rinsed
  • 3 tablespoons butter or ghee
  • 2 tablespoons sugar
  • 1/4 teaspoon ground saffron, dissolved in 2 tablespoons hot water
  • 1 small onion, finely chopped (optional)
  • Salt, to taste
  • 4 cups water

Instructions

  1. Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in salted water for 30 minutes, then drain.

    Bring 4 cups of water to a boil in a large pot. Add the rice and cook for 6–8 minutes until slightly tender but not fully cooked. Drain and set aside.

  2. Prepare the Barberries

    In a small skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion (if using) and sauté until golden. Add the rinsed barberries and sugar, and gently sauté for 1–2 minutes. Remove from heat to prevent burning.

  3. Steam the Rice

    In a large pot, melt the remaining butter. Add half of the saffron water to the bottom. Layer the partially cooked rice on top. Cover with a lid wrapped in a clean kitchen towel to catch steam, and cook over low heat for 20–25 minutes until the rice is fully cooked and fluffy.

  4. Combine and Serve

    Gently fold the sautéed barberries into the rice or serve them on top for a beautiful presentation. Drizzle with the remaining saffron water for added aroma and color.

Serving

Zereshk Polo is traditionally served alongside Persian chicken dishes like Joojeh (saffron chicken) or roasted lamb. Garnish with slivered almonds or pistachios for extra texture and elegance.
