South Sudanese Mullah (Fish Soup/Stew)

Experience the comforting and aromatic flavors of South Sudanese cuisine with Mullah, a traditional fish soup or stew made with fresh fish, tomatoes, and spices. Rich, flavorful, and deeply nourishing, this dish is a staple across the region, often enjoyed with kisra, ugali, or rice.

Ingredients

  • 1 medium whole fish (tilapia, Nile perch, or catfish), cleaned and cut into pieces
  • 2 tablespoons vegetable oil (or red palm oil for richer flavor)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1–2 tablespoons tomato paste (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric (optional)
  • 1–2 fresh green chilies, chopped (to taste)
  • 2 tablespoons ground peanuts (optional, for thickening and flavor)
  • Salt and black pepper to taste
  • 3–4 cups water or fish stock
  • A handful of fresh okra (optional, sliced)
  • Fresh lemon juice (optional, for serving)

Instructions

  1. Prepare the Fish

    Season the fish pieces lightly with salt and black pepper. In a pot, heat the oil and gently fry the fish until slightly browned on each side. Remove and set aside.

  2. Make the Base

    In the same pot, add a bit more oil if needed. Fry the onions until soft and golden. Add garlic, tomatoes, and tomato paste, stirring until the tomatoes break down into a thick sauce.

  3. Add Spices

    Stir in cumin, coriander, turmeric, and chili. Cook for 2–3 minutes until fragrant.

  4. Build the Soup

    Pour in the water or stock and bring to a simmer. Add the ground peanuts (if using) and stir until dissolved and slightly thickened. Return the fish to the pot, add okra (if using), and simmer gently for about 15–20 minutes until the fish is cooked through and the flavors blend.

  5. Serve

    Adjust salt and pepper to taste. Serve hot with kisra (fermented sorghum flatbread), ugali, or plain rice. Garnish with a squeeze of lemon juice for freshness.
