Moi Moi (Nigerian Steamed Bean Cake)

- 2 tablespoons ground crayfish (optional)
- 1 teaspoon ground paprika
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon ground white pepper
- 1–2 cups water (adjust for blending)
- 3 boiled eggs, sliced (optional)
- 1/2 cup cooked corned beef, flaked (optional)

Prepare the Beans
Soak the peeled beans in water for at least 1 hour or overnight to soften. Drain and rinse thoroughly.

Blend the Ingredients
In a blender, combine the beans, red bell pepper, scotch bonnet, onion, and water. Blend until smooth and creamy. Add vegetable oil, crayfish, paprika, salt, and white pepper, and blend again to incorporate evenly.

Prepare the Steaming Containers
Grease small heatproof bowls, ramekins, or aluminum foil molds lightly with oil. Pour the blended mixture into the containers. If desired, add slices of boiled egg or flaked corned beef on top.

Place the containers in a steamer or large pot with a tight-fitting lid. Steam over medium heat for about 45–60 minutes, or until the Moi Moi is firm and fully cooked. Check doneness by inserting a toothpick; it should come out clean.
