Ingredients

- 2 tbsp (30 ml) niter kibbeh or vegetable oil
- 1/4 cup (60 ml) water
- Salt and pepper to taste
- Optional: chopped fresh herbs for garnish

Heat the niter kibbeh or vegetable oil in a skillet over medium heat. Add the diced onion and cook until softened (about 5 minutes).

Stir in the diced tomato and berbere seasoning. Cook for another 5 minutes until the tomato breaks down into a sauce.

Pour in the water, then season with salt and pepper. Allow the sauce to simmer for a few minutes until slightly thickened.
