- ¼ cup soy sauce
- ¼ cup mirin
- 1 teaspoon grated daikon radish (optional)

Heat vegetable oil in a deep pot to 340–360°F (170–180°C). Dip shrimp and vegetables into the batter, then carefully place them in the hot oil. Fry in small batches until golden and crisp, about 2–3 minutes. Remove and drain on paper towels.

In a small saucepan, combine dashi, soy sauce, and mirin. Bring to a gentle simmer, then remove from heat. Add grated daikon if desired.
