Kalops (Swedish Beef Stew)

Ingredients
- 2 lbs (900 g) beef chuck, cut into 1-inch cubes
- 2 tablespoons butter
- 2 large onions, thinly sliced
- 3 carrots, sliced into rounds
- 4 cups beef broth
- 10 whole black peppercorns
- 2 bay leaves
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Boiled potatoes, for serving

Prepare the Beef
Heat butter in a large pot over medium heat. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.

Cook the Vegetables
In the same pot, add sliced onions and cook until soft and lightly golden. Add the carrots and cook for a few more minutes.

Simmer the Stew
Return the beef to the pot. Pour in the beef broth, then add peppercorns, bay leaves, and a pinch of salt. Bring to a boil, then reduce heat to low and simmer, covered, for 1.5 to 2 hours, or until the beef is tender and the flavors are well blended.

Remove the bay leaves and adjust seasoning with salt if needed. Serve the Kalops hot, garnished with fresh parsley and accompanied by boiled potatoes.
