Ingredients

For the Mayi Moulen (Cornmeal):

  • 4 cups water
  • 1 teaspoon salt

For the Sòs Pwa (Bean Sauce):
  • 2 cups cooked red or black beans (or 1 can, drained)
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet or habanero pepper (optional, finely chopped)
  • 1 teaspoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon parsley, chopped
  • Salt and pepper to taste
  • 1 cup water or bean cooking liquid

Instructions

  1. Prepare the Cornmeal

    In a medium saucepan, bring water and salt to a boil. Gradually whisk in the cornmeal, stirring constantly to prevent lumps. Reduce heat to low and cook for 10–15 minutes until thickened and creamy, stirring occasionally. Stir in butter or oil for extra richness. Keep warm.

  2. Prepare the Bean Sauce

    Heat oil in a skillet over medium heat. Sauté onions and garlic until soft and fragrant. Add the scotch bonnet (if using), tomato paste, thyme, and parsley. Cook for 2–3 minutes. Stir in the beans and 1 cup water (or bean liquid), mashing some of the beans to thicken the sauce. Simmer on low for 10–15 minutes, stirring occasionally. Season with salt and pepper to taste.
