Fondue (Cheese Fondue)

Ingredients

  • 1 clove garlic, halved
  • 1 cup dry white wine
  • 8 ounces Gruyère cheese, grated
  • 8 ounces Emmental cheese, grated
  • 1 teaspoon cornstarch
  • 1 tablespoon kirsch (cherry brandy), optional
  • Freshly ground black pepper, to taste
  • Freshly grated nutmeg, to taste
  • Cubed bread, vegetables, or fruit for dipping

Instructions

  1. Prepare the Pot

    Rub the inside of a fondue pot with the cut sides of the garlic. Discard garlic or leave it in for extra flavor.

  2. Heat the Wine

    Pour the wine into the pot and heat over medium heat until hot, but not boiling.

  3. Melt the Cheese

    In a bowl, toss the grated cheeses with cornstarch. Gradually add the cheese to the hot wine, stirring constantly in a zigzag motion until melted and smooth. Avoid circular stirring to prevent the cheese from clumping.

  4. Season the Fondue

    Stir in kirsch, if using, and season with black pepper and nutmeg. Keep the fondue warm over a low flame.

  5. Serve

    Serve the fondue with cubes of bread, blanched vegetables, or fruit for dipping. Use long fondue forks to dip and enjoy.
