Tabbouleh (Lebanese Parsley Salad)

Ingredients

  • 1/2 cup fine bulgur wheat
  • 1 cup boiling water
  • 2 cups fresh parsley, finely chopped

  • 4 medium tomatoes, diced
  • 1 small cucumber, diced (optional)
  • 4 green onions, finely chopped
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Bulgur

    Place the bulgur in a bowl and pour boiling water over it. Cover and let it soak for about 15–20 minutes until tender. Drain any excess water and set aside to cool.

  2. Chop the Herbs and Vegetables

    Finely chop the parsley, mint, tomatoes, cucumber (if using), and green onions. The key to a great Tabbouleh is uniform, small pieces that blend well together.

  3. Mix the Salad

    In a large bowl, combine the soaked bulgur, chopped herbs, and vegetables. Add lemon juice, olive oil, salt, and pepper. Toss everything together until evenly mixed.

  4. Chill and Serve

    Refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a side dish, mezze, or light lunch.
