Munkoyo (Zambian Fermented Beverage)

Ingredients

  • 2 cups maize meal (cornmeal)
  • 1 tablespoon Munkoyo root powder or fresh Munkoyo roots, cleaned and chopped
  • 8 cups water
  • 1/4 cup sugar (optional, adjust to taste)

Instructions

  1. Prepare the Maize Base

    In a large pot, bring 6 cups of water to a boil. Gradually whisk in the maize meal to form a smooth, thick porridge. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and allow it to cool to room temperature.

  2. Fermentation

    In a large container, combine the cooled maize porridge with 2 cups of water. Add the Munkoyo root powder or chopped roots and mix thoroughly. Cover the container with a clean cloth and leave at room temperature for 24 to 48 hours, depending on the desired level of fermentation. Stir occasionally.

  3. Serve

    After fermentation, strain the mixture to remove any solids. Add sugar if desired and stir until dissolved. Chill in the refrigerator before serving.
