Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • Nori sheets (seaweed)
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 8 ounces fresh raw fish (tuna, salmon, or preferred choice), thinly sliced
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions

  1. Prepare the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker or pot, cook according to the rice cooker instructions or bring to a boil and simmer covered for 20 minutes. Let the rice rest for 10 minutes.

  2. Season the Rice

    In a small saucepan, heat rice vinegar, sugar, and salt until dissolved. Pour over the cooked rice and gently fold to combine. Allow the rice to cool to room temperature.

  3. Assemble the Sushi Rolls

    Place a bamboo sushi mat on a flat surface and cover with plastic wrap. Lay a sheet of nori shiny side down. Spread a thin, even layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange cucumber, avocado, and fish along the bottom edge.

  4. Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight cylinder. Seal the edge with a little water. Repeat with remaining ingredients.

  5. Slice and Serve

    With a sharp, damp knife, cut each roll into 6–8 pieces. Arrange on a serving platter and serve with soy sauce, pickled ginger, and wasabi.
