Spätzle (German Egg Noodles)

Ingredients

Instructions

  1. Prepare the Batter

    In a large mixing bowl, whisk together the flour, eggs, milk, salt, and any optional seasonings until a smooth batter forms. Let the batter rest for about 10–15 minutes to allow the gluten to relax.

  2. Cook Spätzle

    Bring a large pot of salted water to a boil. Using a Spätzle maker, colander, or a large-holed slotted spoon, press the batter through the holes into the boiling water. Alternatively, spread the batter onto a cutting board and scrape small pieces into the water with a knife.

    Cook the Spätzle for about 2–3 minutes, or until they float to the surface.

  3. Drain and Prevent Sticking

    Use a slotted spoon to transfer the cooked Spätzle to a colander and rinse them briefly under cold water to stop the cooking process. If not serving immediately, toss the Spätzle with a little oil to prevent sticking.
