Tam Mak Hoong Recipe

Tam Mak Hoong (Laotian Green Papaya Salad)

Experience the vibrant, bold, and refreshing flavors of Lao cuisine with Tam Mak Hoong, a beloved green papaya salad that perfectly balances sour, spicy, salty, and sweet tastes. Made with crisp shredded green papaya, zesty lime, savory fish sauce, and fiery chilies, this dish is a staple across Laos and a favorite street food in Southeast Asia. Light yet bursting with flavor, Tam Mak Hoong is perfect as a side dish or a refreshing meal on its own.

Ingredients

  • 3 cups shredded green papaya (unripe)
  • 2–3 cloves garlic
  • 4–6 bird’s eye chilies (adjust to spice preference)
  • 2 tablespoons fish sauce (or vegan substitute: soy sauce)
  • 2 tablespoons lime juice
  • 1 tablespoon palm sugar (or brown sugar)
  • 2 small tomatoes, cut into wedges
  • 2 tablespoons fermented fish sauce (optional, traditional for depth of flavor)
  • 2 tablespoons roasted peanuts, roughly crushed
  • Fresh herbs (optional: cilantro, Thai basil, or mint)

Instructions

  1. Prepare the Papaya

Peel the green papaya and shred it into thin strips using a grater or mandoline. Place the shredded papaya in a large bowl and set aside.

  2. Pound the Aromatics

In a mortar and pestle, pound the garlic and chilies together until lightly crushed. Add palm sugar, fish sauce, fermented fish sauce (if using), and lime juice, mixing into a fragrant dressing.

  3. Mix the Salad

Add tomato wedges to the mortar and lightly bruise them to release their juices. Transfer the mixture to the bowl of shredded papaya. Toss everything together, ensuring the papaya is well coated in the dressing.

  4. Finish and Serve

Top with roasted peanuts and fresh herbs. Adjust seasoning to taste—add more lime juice for tanginess, fish sauce for saltiness, or sugar for sweetness.

Serving

Serve Tam Mak Hoong fresh and cold, alongside sticky rice or grilled meats for a complete Laotian meal. It also pairs beautifully with simple steamed rice as a light, refreshing side.

Enjoy the crisp textures and lively flavors of Tam Mak Hoong - a dish that embodies the essence of Lao cuisine: bold, balanced, and deeply satisfying.
