Ingredients:
2 lbs (0.9 kg) chicken (or pork ribs)
8 cups (1.9 L) water
2 limes, juiced
1 onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 potatoes, diced
1 Scotch bonnet pepper, whole
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon allspice
2 bay leaves
1 tablespoon fresh thyme
½ cup (0.12 L) white vinegar
Instructions:
Step 1: Prepare the Meat Rinse the chicken or pork with lime juice and water to remove any impurities. Cut the meat into bite-sized pieces.
Step 2: Cook the Base In a large pot, bring 8 cups of water to a boil. Add the meat, onion, garlic, bay leaves, and thyme. Simmer for 30 minutes, skimming off any foam.
Step 3: Add Vegetables and Seasonings Add the potatoes, carrots, Scotch bonnet pepper, salt, black pepper, allspice, and vinegar. Reduce the heat and let it simmer for another 20-30 minutes, or until the vegetables are tender.
Step 4: Adjust and Serve Taste and adjust seasoning if needed. Remove the Scotch bonnet pepper for a milder flavor. Serve hot with Johnny cakes or Bahamian bread.
