Souse (Pickled Pork Dish)

Ingredients
- 2 pounds pork hocks or pork feet, cleaned and chopped
- 1 large onion, thinly sliced
- 2 bell peppers, thinly sliced
- 3 stalks celery, chopped
- 1 cucumber, sliced
- 4 cloves garlic, minced
- 1 cup white vinegar
- 2 cups water
- 1 tablespoon salt (adjust to taste)
- 1 teaspoon black pepper
- 1 teaspoon allspice
- 1 teaspoon thyme
- 2 bay leaves
- 1 scotch bonnet pepper (optional, for heat)
- Juice of 1 lime
- Fresh parsley, chopped, for garnish

Prepare the Pork
Clean the pork thoroughly and remove any hairs. Place the pork in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours until tender. Skim off any foam during cooking.

Make the Pickling Liquid
In a separate pot, combine vinegar, water, salt, black pepper, allspice, thyme, bay leaves, and garlic. Bring to a simmer and stir until the salt dissolves. Remove from heat and let cool slightly.

Combine and Marinate
Once the pork is cooked, remove it from the pot and allow it to cool slightly. Chop into bite-sized pieces. In a large bowl, mix the pork with sliced onions, bell peppers, celery, and cucumber. Pour the warm pickling liquid over the mixture, ensuring all ingredients are submerged. Add lime juice and stir well.

Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld. Serve cold, garnished with fresh parsley.
