Rogan Josh (Kashmiri Lamb Curry)

Ingredients
- 2 pounds lamb shoulder or leg, cut into 1.5-inch cubes
- 3 tablespoons vegetable oil or ghee
- 2 large onions, finely sliced
- 4 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 cup plain yogurt
- 1 teaspoon ground turmeric
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 2 teaspoons Kashmiri red chili powder (or paprika for milder heat)
- 1 teaspoon garam masala
- 4-5 green cardamom pods
- 4 whole cloves
- 2-3 green chilies, slit lengthwise
- 1 cinnamon stick
- 1 cup water or lamb broth
- Salt to taste
- Fresh cilantro leaves for garnish

Prepare the Lamb
Pat the lamb pieces dry and season lightly with salt. Set aside while preparing the other ingredients.

Cook the Aromatics
Heat oil or ghee in a heavy-bottomed pot over medium heat. Add the sliced onions and cook until golden brown, about 15 minutes. Stir in garlic and ginger and sauté for another 2 minutes until fragrant.

Add Spices and Yogurt
Lower the heat and add turmeric, coriander, cumin, and Kashmiri chili powder. Cook for 1-2 minutes, stirring constantly. Gradually mix in the yogurt, ensuring it doesn’t curdle.

Simmer the Lamb
Add the lamb cubes and coat them well with the spice-yogurt mixture. Add cardamom, cloves, cinnamon, and green chilies. Pour in water or broth, bring to a boil, then reduce heat to low. Cover and simmer gently for 1.5 to 2 hours, or until the lamb is tender and the sauce has thickened.
