For the Dumplings:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup water (adjust as needed)

Instructions

  1. Prepare the Dumplings

    In a large bowl, mix flour, baking powder, and salt. Gradually add water, mixing until a soft dough forms. Knead briefly on a floured surface and shape into small logs or bite-sized pieces. Set aside.

  2. Cook the Curry Crab

    Heat vegetable oil in a large pot over medium heat. Add onion, garlic, and Scotch bonnet pepper. Sauté until fragrant and softened. Stir in curry powder, thyme, and paprika, cooking for 1–2 minutes to release the flavors. Add the crab pieces and stir to coat evenly with the spices. Pour in coconut milk and water (or stock), bring to a gentle boil, then reduce heat and simmer for 10–15 minutes. Season with salt, pepper, and lime juice. Stir in green onions before serving.
