Kapustnica (Slovak Sauerkraut Soup)

Ingredients
- 1 pound smoked sausage, sliced
- 1/2 pound smoked pork (optional), cut into cubes
- 1 medium onion, finely chopped
- 2 tablespoons vegetable oil
- 4 cups sauerkraut, drained and chopped
- 6 cups water or broth (chicken or vegetable)
- 1/2 cup dried mushrooms, soaked in warm water and chopped
- 2 tablespoons tomato paste
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 bay leaf
- Salt and pepper to taste
- 1 teaspoon caraway seeds (optional)
- 2 tablespoons all-purpose flour (optional, for thickening)
- 1/2 cup sour cream (for serving, optional)

Prepare the Base
Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent. Add the garlic, paprika, and tomato paste, stirring for 1–2 minutes until fragrant.

Add Meats and Mushrooms
Add the smoked sausage and smoked pork cubes to the pot. Sauté briefly to develop flavor. Stir in the soaked and chopped mushrooms along with a splash of the soaking water.

Simmer with Sauerkraut
Add the chopped sauerkraut, water or broth, bay leaf, and caraway seeds if using. Bring to a boil, then reduce the heat and let it simmer gently for 45 minutes to 1 hour.

Optional Thickening
If you prefer a thicker soup, mix flour with a small amount of cold water to create a slurry and stir it into the soup. Simmer for another 5–10 minutes until slightly thickened.

Taste and adjust seasoning with salt and pepper. Remove the bay leaf before serving. Ladle the soup into bowls and top with a spoonful of sour cream if desired.
