Sisig (Filipino Sizzling Pork)

Ingredients

  • 1 lb pork belly, boiled and diced
  • 1/2 lb pork ears or pork head, boiled and diced (optional for traditional texture)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2-3 Thai chilies, finely chopped (adjust to taste)
  • 2 tablespoons soy sauce
  • 1 tablespoon calamansi juice (or lemon juice)
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons mayonnaise (optional for creamy version)
  • 2 tablespoons cooking oil
  • Salt to taste
  • 1 egg (optional, for topping)

Instructions

  1. Prepare the Pork

    Boil the pork belly and pork ears/head until tender, about 30–45 minutes. Drain and allow to cool, then dice into small pieces. For extra flavor, grill or broil the pork pieces briefly to get a slightly charred, crispy texture.

  2. Sauté Aromatics

    Heat cooking oil in a large skillet over medium heat. Sauté garlic and onion until fragrant and translucent. Add chopped chilies and cook for another minute.

  3. Cook the Sisig

    Add the diced pork to the skillet and stir-fry until slightly crispy and golden. Pour in soy sauce, calamansi juice, and black pepper. Stir well to evenly coat the pork. Taste and adjust seasoning with salt or additional calamansi juice if needed.

  4. Optional Creamy Version

    If desired, mix in mayonnaise at this stage for a creamier Sisig. Stir until fully combined.

  5. Serve Sizzling

    Transfer the Sisig to a hot sizzling plate if available. Top with a raw egg and let the residual heat cook it slightly, creating a rich and glossy finish. Serve immediately.

Serving

Serve Sisig as a main dish with steamed rice or as an appetizer paired with cold beer. Garnish with extra calamansi wedges and chopped green onions for freshness.
