Machboos (Spiced Rice with Meat)

Ingredients
- 2 cups basmati rice
- 1 lb chicken, lamb, or beef, cut into pieces
- 2 tablespoons vegetable oil
- 2 large onions, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, chopped
- 2 teaspoons ground turmeric
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon black lime powder or 2 dried limes (loomi)
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt (adjust to taste)
- 4 cups water or chicken broth
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Optional: toasted nuts (almonds or cashews) for garnish
- Optional: raisins for garnish

Prepare the Meat
Heat vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown. Stir in the garlic and cook for 1-2 minutes. Add the meat pieces and brown them on all sides.

Add turmeric, cumin, coriander, cinnamon, cardamom, black lime, black pepper, and salt. Stir well to coat the meat with the spices. Add chopped tomatoes and cook until they soften and form a thick sauce.
