Instructions

  1. Marinate the Goat

    Place the goat meat in a large bowl. Add curry powder, allspice, chopped onion, garlic, Scotch bonnet peppers, thyme, scallions, salt, and pepper. Mix thoroughly, cover, and let marinate for at least 2 hours, preferably overnight in the refrigerator for maximum flavor.

  2. Brown the Meat

    Heat vegetable oil in a large pot over medium-high heat. Add the marinated goat meat and sear until browned on all sides, about 8–10 minutes. This step locks in flavor and develops a rich color.

  3. Simmer
