Shark Chutney

Ingredients
- 1 lb (450 g) shark meat, cleaned and cut into small pieces
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2-3 garlic cloves, minced
- 1-inch piece ginger, grated
- 2-3 green chilies, chopped
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon ground coriander
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon fenugreek seeds (optional)
- 2 medium tomatoes, chopped
- 2 tablespoons tamarind paste (or juice from a small lemon as substitute)
- 1 teaspoon sugar
- Salt to taste
- Fresh cilantro, chopped, for garnish

Prepare the Shark
Rinse the shark pieces thoroughly and pat dry. Set aside.

Cook the Aromatics
Heat vegetable oil in a large pan over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds. When they start to splutter, add onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.

Add Spices and Tomatoes
Stir in turmeric, red chili powder, and ground coriander. Add chopped tomatoes and cook until they soften and blend with the spices.

Cook the Shark
Add the shark pieces to the pan, coating them well with the spice mixture. Cook for about 5–7 minutes, stirring gently to prevent breaking the pieces.

Add Tamarind and Simmer
Stir in tamarind paste, sugar, and salt. Add a little water if needed to create a saucy consistency. Cover and simmer on low heat for 15–20 minutes, until the shark is tender and fully cooked.

Garnish with freshly chopped cilantro. Serve Shark Chutney hot as a side dish with steamed rice, flatbreads, or as a tangy accompaniment to grilled seafood.
