Sarmale (Romanian Cabbage Rolls)
Sarmale is a beloved traditional Romanian dish featuring cabbage leaves stuffed with a flavorful mixture of meat and rice, slowly simmered in a rich tomato sauce. Perfect for festive gatherings or cozy family dinners, Sarmale delivers comforting flavors that warm the heart and soul.
Ingredients
- 1 large sour cabbage or 12–14 large cabbage leaves
- 1 lb (450 g) ground pork
- 1/2 lb (225 g) ground beef
- 1 cup rice, washed and drained
- 1 large onion, finely chopped
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 teaspoon dried thyme or dill (optional)
- 1/4 cup vegetable oil
- 2 cups sauerkraut juice or water
- 1 bay leaf
- 4–5 slices smoked bacon or ham (optional, for extra flavor)

Prepare the Cabbage Leaves
Carefully separate the cabbage leaves and trim the thick vein at the base of each leaf to make rolling easier. If using a whole sour cabbage, rinse leaves under cold water to reduce acidity.

Make the Filling
In a large bowl, combine ground pork, ground beef, rice, chopped onion, tomato paste, paprika, salt, pepper, and herbs if using. Mix thoroughly until well combined.

Roll the Sarmale
Place a spoonful of the filling onto the center of each cabbage leaf. Fold the sides over the filling and roll tightly, tucking in the ends to secure the mixture.

Assemble the Pot
In a large pot, layer a few cabbage leaves on the bottom to prevent sticking. Arrange the rolls tightly in the pot. Place slices of smoked bacon or ham between layers if using. Add bay leaf and pour sauerkraut juice or water over the rolls until just covered.

Cook the Sarmale
Cover the pot and simmer over low heat for 1.5–2 hours, occasionally checking to ensure there is enough liquid. The rice and meat should be fully cooked, and the flavors melded together beautifully.
