Malabi Recipe

Malabi (Middle Eastern Milk Pudding)

Indulge in the creamy, fragrant delight of Malabi, a traditional Middle Eastern milk pudding flavored with rose water and garnished with nuts and syrup. Perfect as a light dessert or a sweet treat after a meal, Malabi offers a delicate balance of floral aroma and smooth texture that melts in your mouth.

Ingredients

  • 4 cups milk (whole milk preferred)
  • ½ cup sugar
  • ¼ cup cornstarch
  • 1 tablespoon rose water (adjust to taste)
  • 1 teaspoon vanilla extract (optional)
  • ¼ cup chopped pistachios or almonds for garnish
  • ¼ cup shredded coconut (optional)
  • ¼ cup pomegranate seeds or berry syrup for topping

Instructions

  1. Prepare the Mixture

In a medium saucepan, combine milk, sugar, and cornstarch. Whisk well until the cornstarch is fully dissolved and there are no lumps.

  2. Cook the Pudding

Place the saucepan over medium heat. Stir continuously to prevent the mixture from sticking to the bottom. Cook until it thickens to a creamy consistency, about 10–12 minutes.

  3. Flavor

Remove the saucepan from heat. Stir in the rose water and vanilla extract, mixing thoroughly to infuse the pudding with its signature floral aroma.

  4. Set the Pudding

Pour the pudding into individual serving cups or bowls. Allow it to cool to room temperature, then refrigerate for at least 2 hours, or until fully set.

  5. Garnish and Serve

Before serving, top each portion with chopped pistachios or almonds, a sprinkle of shredded coconut, and pomegranate seeds or berry syrup for a colorful presentation.

Serving

Malabi is best enjoyed chilled, offering a refreshing and delicate dessert experience. Perfect for festive occasions or as a sweet finale to a special meal, this dessert embodies the rich traditions of Middle Eastern cuisine while delighting the senses with its creamy texture and fragrant flavors.
