Dovi (West African Peanut Stew)

Ingredients

  • 1 lb (450 g) chicken pieces, beef, or lamb, cut into bite-sized pieces

  • 1-inch piece of ginger, grated
  • 1-2 fresh tomatoes, chopped (or 1 cup canned tomatoes)
  • ½ cup natural peanut butter
  • 2 cups chicken or vegetable broth
  • 1 medium sweet potato, peeled and diced
  • 1-2 carrots, sliced
  • 1 bell pepper, chopped
  • 1-2 scotch bonnet peppers, finely chopped (optional, adjust for heat)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the Base

    Heat vegetable oil in a large pot over medium heat. Add chopped onions, garlic, and ginger, sautéing until fragrant and translucent. Stir in the chopped tomatoes and cook for 5 minutes until they soften and blend with the aromatics.

  2. Cook the Meat

    Add the meat pieces to the pot and brown them on all sides. Season with cumin, paprika, salt, and black pepper.

  3. Add Vegetables and Broth
