Samak Mofa (Grilled Fish with Yemeni Spices)
Samak Mofa is a traditional Yemeni dish featuring whole fish marinated in a blend of aromatic spices and grilled to perfection. This flavorful recipe is popular in Yemeni cuisine and offers a delightful combination of spices and smoky grilled fish.
Ingredients
- 1 whole fish (such as red snapper or sea bass), cleaned and scaled
- 2 tablespoons olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt to taste
- Freshly ground black pepper to taste
- Fresh parsley or cilantro for garnish
- Lemon wedges for serving
Instructions
-
Prepare the Marinade
In a bowl, combine the olive oil, lemon juice, minced garlic, ground coriander, ground cumin, paprika, turmeric, salt, and black pepper. Mix well to form a smooth marinade.
-
Marinate the Fish
Make a few diagonal slashes on both sides of the fish to help the marinade penetrate. Place the fish in a shallow dish and pour the marinade over it, ensuring it coats the fish evenly. Massage the marinade into the slashes and the cavity of the fish. Cover and refrigerate for at least 1 hour to allow flavors to develop.
-
Grill the Fish
Preheat your grill to medium-high heat. Place the marinated fish on the grill and cook for about 4–5 minutes on each side, or until the fish is cooked through and has a nice char. The flesh should be opaque and easily flake with a fork.
-
Serve
Transfer the grilled fish to a serving platter. Garnish with fresh parsley or cilantro and serve with lemon wedges on the side.

Samak Mofa pairs wonderfully with traditional Yemeni sides such as rice, flatbread, or a fresh salad. The aromatic spices and smoky flavor of the grilled fish make it a standout dish for any occasion.
