Perfect for festive occasions or a comforting homemade meal, Idrijski Žlikrofi bring a piece of Slovenia to your table.

Ingredients

For the Dough:
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 tablespoon olive oil
  • A pinch of salt
  • Water as needed
For the Filling:
  • 3 medium potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 2 tablespoons minced lard or butter
  • 1 tablespoon finely chopped parsley
  • Salt and pepper to taste
  • A pinch of marjoram (optional)
For Serving:
  • Browned butter, bacon bits, or a meat sauce (such as lamb or rabbit sauce, traditional in Slovenia)

Instructions

  1. Prepare the Dough

In a large bowl, combine flour and salt. Add eggs and olive oil, mixing to form a dough. Gradually add a little water if needed until the dough becomes smooth and elastic. Knead for 5–10 minutes, then cover and let it rest for 30 minutes.

  2. Make the Filling

Heat lard or butter in a pan and sauté the chopped onion until golden. Add it to the mashed potatoes along with parsley, marjoram, salt, and pepper. Mix well until the filling is smooth and flavorful.

  3. Shape the Dumplings

Roll out the dough thinly on a floured surface. Cut it into squares (about 2 inches each). Place a small teaspoon of filling in the center of each square. Fold the dough over the filling diagonally, pressing the edges to seal, then pinch the corners together to form the characteristic “hat” shape of Idrijski Žlikrofi.

  4. Cook the Dumplings

Bring a large pot of salted water to a gentle boil. Drop the dumplings in batches and cook until they rise to the surface, about 3–4 minutes. Remove with a slotted spoon and drain well.

  5. Serve

Serve Idrijski Žlikrofi hot, topped with browned butter and crispy bacon, or accompanied by a rich meat sauce for a traditional Slovenian experience.

Serving

Pair Idrijski Žlikrofi with a glass of white wine or a light salad for a balanced meal. Whether as a main dish or a side, these tender dumplings offer a comforting taste of Slovenia’s rich culinary heritage.

Enjoy the handmade charm and heartwarming flavor of Idrijski Žlikrofi — a true symbol of Slovenian tradition and care in every bite.
