Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until fragrant and translucent. Add diced carrot and potato, cooking for another 3–4 minutes.

Add the fenugreek leaves to the pot and simmer for an additional 5 minutes. If using dried fenugreek, cook for 10 minutes to fully release the flavor.
