  • 4 cups vegetable or chicken broth
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon turmeric powder
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare the Vegetables

    Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until fragrant and translucent. Add diced carrot and potato, cooking for another 3–4 minutes.

  2. Add Spices and Broth

    Stir in cumin and turmeric, coating the vegetables with the spices. Pour in the vegetable or chicken broth and bring to a boil. Reduce heat to a simmer and cook until the vegetables are tender, about 15–20 minutes.

  3. Add Fenugreek

    Add the fenugreek leaves to the pot and simmer for an additional 5 minutes. If using dried fenugreek, cook for 10 minutes to fully release the flavor.

  4. Blend the Soup

    Using an immersion blender or a regular blender, purée the soup until smooth. Return to the pot and adjust the consistency with extra broth if needed. Season with salt, pepper, and lemon juice to taste.

  5. Serve
