Ingredients:
1 lb (0.45 kg) Spinach, washed and chopped
1 lb (0.45 kg) Paneer, cubed
2 tbsp Ghee
1 large Onion, finely chopped
2 Tomatoes, finely chopped
2 Green Chilies, minced
1 tbsp Ginger, grated
1 tbsp Garlic, minced
1 tsp Cumin Seeds
1 tsp Ground Coriander
1 tsp Ground Cumin
1/2 tsp Turmeric Powder
1/2 tsp Garam Masala
Salt to taste
1/2 cup Heavy Cream
Fresh Coriander for garnish
Instructions:
Blanch the chopped spinach in boiling water, then plunge it into ice water to retain the vibrant green color. Blend it into a smooth puree. Heat ghee in a pan, add cumin seeds, and let them splutter. Sauté onions until golden brown, then add ginger, garlic, and green chilies. Add chopped tomatoes and cook until they soften. Stir in ground coriander, ground cumin, turmeric powder, garam masala, and salt. Pour in the spinach puree and cook until it thickens. Add paneer cubes and simmer until the paneer is heated through.
